Vinification: the grapes are harvested exclusively by hand. Soft grape-pressing. Thermo- controlled fermentation in stainless steel tanks with frequent delestage. Long fermentation, completed malolactic fermentation
Aging/maturation: 8 months in 32 hl oak casks, in part French oak tonneaux. Maturation in bottles for at least 6 months
TASTING NOTES:
Color: very deep ruby red.
Perfume: typical is the slightly herb note; strong is the very ripe cherry aromas and bleckberry which is married softly by a far smell of wood
Taste: the harmony is the primary sensation, pleasantly tannic, balanced and
persisting; the agreeable sent of red berries, where the blackberry predominates; it evokes the covert shadow of the fox running along the soft slopes of our hills
